2. Related introduction

Oxygen is one of the most important factors causing food spoilage. There are many components in food that are closely related to the presence of oxygen. From the biochemical point of view, fat will be oxidized by oxygen, vitamins and a variety of amino acids will lose nutritional value, oxygen will also make the unstable pigment discoloration or fading; from the microbiological point of view, most of the microorganisms will grow well in an aerobic environment, even if the oxygen content in the packaging environment as low as 2 ~ 3%, most of the aerobic bacteria and part-time anaerobic bacteria can still grow, biochemical reactions will still be carried out. Therefore, the removal of oxygen in the packaging has a very important practical significance. Through the chemical reaction, the oxygen in the closed container is removed in a short time, so that the food is in an oxygen-free state (O2 concentration below 0.01%), effectively controlling the growth of bacteria, mold, and other microorganisms, and preventing the oxidation of oil and grease, which can effectively maintain the color, aroma, and taste of food, prevent vitamins and other nutrients from being destroyed by oxidation, and extend the shelf life of food.

Deoxidizer according to its composition can be divided into two types:

 (1) is the main inorganic matrix deoxidizer, such as reduced iron powder. The principle is that the iron powder in the presence of oxygen and water vapor is oxidized to iron hydroxide. Another example is the sulfite system deoxidizer, which is the main agent of even bisulfite, Ca (OH) 2, and activated carbon as a secondary agent, in the presence of water in the environment for the reaction.

 (2) It is organic substrate as the main agent, such as enzymes, ascorbic acid, oleic acid, etc. Ascorbic acid (AA) itself is a reducing agent, in the presence of oxygen, using copper ions as a catalyst can be oxidized or dehydrogenated ascorbic acid (DHAA), thereby removing the oxygen in the environment, commonly used to remove oxygen in liquid food, ascorbic acid deoxidizer is the use of deoxidizing agents in a safer kind, enzyme deoxidizers commonly used is glucose oxidation alcohol, is the use of glucose oxidation to gluconic acid when the consumption of oxygen to achieve the purpose of deoxidation.

The common reaction principles of deoxidants are iron powder oxidation (iron system), enzyme oxidation (enzyme system), ascorbic acid oxidation, and light-sensitive dye oxidation. Most of the deoxidizers used are based on the iron powder oxidation reaction. Such iron-based deoxidizers can be made into bags and put into packages to reduce the concentration of oxygen to 0.01%. Generally, 1g of iron powder is required to react with 300mL of oxygen, and the appropriate amount can be selected according to the amount of oxygen remaining in the package and the oxygen permeability of the packaging film when used. The products applied include candy, dried seafood snacks, cooked meat products, rice cakes, pasta, cheese, dried vegetables. In addition to bagged deoxidizers, plastic labels or various cards containing active iron powder are inserted into the package.

In addition to iron-based deoxidizers, enzyme-based deoxidizers are also widely used. Enzyme-based deoxidizers are sensitive to changes in pH, Aw, salt content, temperature, and other factors, and also require the participation of water in the reaction, so they are not effective when applied to foods with low moisture content. However, in bottled beer or white wine beverages, this deoxidizer can be made directly into a sachet and placed in the bottle cap. Alternatively, the enzyme system can be fixed on polypropylene or polyethylene film. Steelmaking with deoxidizers are mainly silicon aluminum barium calcium iron, calcium silicon cored wire, aluminum wire, aluminum manganese iron, steel core aluminum, calcium carbide, and silicon carbide, etc. The main role is to react with dissolved oxygen in iron water, mainly to produce non-metallic compounds, the formation of precipitation floating to the slag layer, to be removed to get pure iron water.

Deoxidizer can be used alone, can also be used in combination with gas conditioning packaging. In practice, the use of gas conditioning packaging to remove most of the oxygen, and then use a smaller number of deoxidizers to remove the residual oxygen in the package approach.

The main deoxygenation methods are precipitation deoxygenation, diffusion deoxygenation, and vacuum deoxygenation. In addition, modern steelmaking can also use vacuum equipment for deoxygenation, such as VD furnaces, VOD furnaces, etc.
